Ingredients
- 1 whole chicken (about 4–5 lbs)
- 2 tbsp olive oil or melted butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp fresh or dried herbs (see list below)
- 1 tsp paprika (optional, for color and mild smokiness)
- 1 lemon (halved, for stuffing and moisture)
- 4 cloves garlic (crushed, for stuffing)
Instructions
Preheat your oven to 375°F (190°C). Pat the chicken dry with paper towels to ensure crispy skin.
Rub the chicken with olive oil or melted butter. Sprinkle the salt, pepper, garlic powder, and onion powder evenly. Then, massage in your choice of herbs and spices.
Stuff the cavity with lemon halves and crushed garlic cloves. This helps infuse moisture and flavor from the inside out.
Tie the legs together using kitchen twine. Place the chicken breast-side up in a roasting pan.
Roast for about 1 hour and 20 minutes, basting occasionally. Check for doneness by inserting a meat thermometer into the thickest part of the thigh—it should read 165°F (75°C)
